If like me, you’ve had a tough week, you might be in need of a little weekend pick-me-up. How about treating yourself to a gooey, chocolatey treat – you’ve got it, I’m talking about chocolate mug cake. Oh yes, the perfect way to spoil yourself on a Friday night, or any other evening for that matter.

 

I’m not just talking about any old mug cake, what I want to share with you is much more special than that. This is a wonderfully adult chocolate mug cake, it’s not just chocolate, it’s chocolate and liqueur. (I bet that peaked your interest!) The best thing about this recipe is that you can swap and change the liqueur, depending on what your fave tipple is. I am a Disaronno or Baileys gal myself, but each to their own.

 

So how did this tasty treat come about? This week has been a tough one, and come five o’clock today, I knew I needed a treat. I’ve mad mug cakes many times before, but never one that was THIS DELICIOUS, and so, I just had to share it with you.

 

What do you need?

 

¼ cup of plain flour

2 tbsp cocoa powder

½ tsp baking powder

2 tbsp caster sugar

¼ cup milk

1 tbsp Disaronno (or your liqueur of choice)

2 tbsp melted butter (some people prefer oil, but I like the buttery taste)

Handful of your favourite chocolate treat (I chose Cadbury Twirl Bites)

 

How do you make it?

 

In a bowl, mix together the dry ingredients

 

Add the milk, melted butter and Disaronno (or your liqueur of choice) and whisk with the other ingredients, to form a smooth batter.

 

Pour the batter into a microwave-safe mug and add your chocolate treat and mix into the batter.

 

Pop into the microwave and cook for 70 – 85 seconds, depending on how powerful your microwave is. If you don’t have a microwave, you can always pop it in the oven for eight to ten minutes.

 

Remove from the microwave, top with cream, ice cream or chocolate sauce, and enjoy. I don’t know about you, but I love a treat at the end of the week, and this oozy mug cake is just perfect.
