In a bid to be a little healthier (and reduce my carbon footprint), I’ve started trying to eat at least two vegetarian meals a week. So when Hello Fresh got in touch to ask if I would like to collaborate, I was extremely excited as I know how tasty their recipes are and I thought I might come across some new vegetarian meals to try.


After browsing the Hello Fresh website for recipe inspiration, I came across the perfect option: Warming Cauliflower Dahl. As soon as I saw the recipe, I knew I would love it. It sounded wonderfully warming and deliciously filling – perfect for cold winter evenings when comfort food is the order of the day. 


How easy is it to make? 


After a busy day at work, no one wants to come home and have to start cooking a meal that is going to take hours to prepare and bake. 


The Warming Cauliflower Dahl recipe I picked is rated by Hello Fresh as being difficulty level 2, which is fine. It takes 40 minutes to prepare and cook, which for a completely homemade meal is fairly quick. 


What do you need to make it? 


The great thing about this dish is that it’s fairly cheap to make, should you wish to make it yourself after trying it in your Hello Fresh box. Plus, most of the main ingredients are kitchen cupboard essentials, so you will most probably have the majority of the ingredients already in stock.



What’s the cooking method?


The recipe set out by Hello Fresh makes cooking the Warming Cauliflower Dahl simple and straight forward.


The process is simple:


1. Prepare the vegetables by slicing and dicing them.

2. Fry the onion on a low heat until its soft. Add the garlic. Season with salt and pepper.

3. Simmer the lentils in the tomatoes.

4. Cook the cauliflower

5. Add the green beans

6. Finish and serve
